The Healthy {and Yummy} Truth!

The new year always brings out resolutions and goals in people, but what happens 4-6 weeks after January 1st? The gym becomes more empty. the fast food chains see more line-ups than before, and we're back to the "norm". I don't know about you but I never want my life to be normal! I am taking strides to make this 'new year's mindset' what I live by all year round. Life gets in the way, but I am motivated to keep pressing on, even if it is by "competing" with the person next to you on the treadmills at the gym (thanks Mary Beth!).
Today's healthy truth is that healthy food can be satisfying and delicious too! one of my FAVORITE dishes to make that is easy, full of vegetables, and you probably have everything you need in your pantry is Chicken Stir-Fry.
I love this meal because you basically get to clean out your fridge when making it! you need:
4 boneless, skinless chicken breasts, cut into bite-size strips or chunks
brown rice (preferably long-grain, because it has the most nutrients), prepared
Oil
Any and all vegetables you can get your hands on in your fridge/freezer, chopped up
chicken broth
seasonings and/or spices that you love!
Start by chopping up onion and mincing garlic into a large saucepan, with your choice of an oil. My preferred choice is Coconut Oil. It is good for you, and gives you a very tiny hint of coconut! Saute those together until onion is tender. If you do not have a garlic mincer/press, you can chop up a couple cloves. But the mincer makes things so much easier!!
I happened to find fresh ginger in my fridge, so I finely chopped some of that and put that in with the onions and garlic.
Then add the vegetables as you chop them up. A rule of thumb so they don't get too soggy is start with the hardest vegetables and move to the softest. So I started with carrots, then celery, frozen corn and peas, and then red and green bell pepper. Saute until still lightly crunchy, because you'll be putting them back into the pan later. Remove from pan into a side bowl.
Chop up the chicken and saute in same pan with more oil until cooked through. 
Add some chicken broth and your favorite spices. My favorite thing to add is Kikkoman Stir-Fry sauce. but I also try to add some other yummy spices like ginger and basil, to give it a freshness.

If your sauce is not thick enough (it probably won't be), make a rue by mixing flour into 8 oz boiling water, and add that in. Add more water if necessary to get a good consistency.

Then add your yummy veggies, stir, and let simmer for a few minutes so all the flavors can meld together.

During this time of cooking the stir-fry, you can prepare your brown rice, as a healthy carb to go along with it.

With this being the first Healthy Truth of the new year, I thought I'd share some of my physical goals for the year with you all:
Lose at least 40 more pounds
Stretch, and stay limber
Increase my strength.
Jog a 5k this summer.
Eat healthy by using a food journal.
